This Pork Belly and Shiitake Mushroom Stir-Fry with Mizuna is a quick and flavorful dish perfect for a weeknight dinner. Tender pork belly is stir-fried with earthy shiitake mushrooms and fresh, peppery mizuna, then seasoned with a balanced blend of sake, mirin, and soy sauce. Serve over white rice for a delicious and satisfying meal.

Shiitake mushrooms are commonly used in Japanese cuisine for their umami flavor in soups, stir-fries, and as a topping for various dishes. They are rich in vitamins, minerals, and antioxidants, which support immune function and overall health.

Mizuna is often used fresh in salads, as a garnish, or lightly cooked in soups and stir-fries for its peppery taste and nutritional benefits. It is packed with vitamins A, C, and K, and antioxidants, promoting immune health and reducing inflammation.

Ingredients:

  • 6 slices of thinly sliced pork belly (about 180g), cut into 5cm widths
  • 6 small fresh shiitake mushrooms, cut into 6 equal parts radially
  • 1 cup of fresh mizuna, roughly chopped
  • 1/2 tablespoon of sake
  • 1/2 tablespoon of mirin
  • 1 teaspoon of soy sauce
  • 1 teaspoon of sesame oil

Instructions:

Step 1 Prepare the Pork Belly:

Heat 1 teaspoon of sesame oil in a large frying pan over medium heat.

Add the pork belly slices and fry until golden brown.

Remove any excess fat with paper towels.

Step 2. Add the Vegetables:

Add the shiitake mushrooms and chopped mizuna to the pan.

Stir-fry briefly until the mizuna wilts.

Step 3. Add the Seasonings:

Pour in the sake, mirin, and soy sauce.

Continue stir-frying until the liquid evaporates and the pork is cooked through.

Step 4. Serve:

Serve the stir-fried pork belly, mushrooms, and mizuna over white rice.
