Salted koji (塩麹, shio-koji) is a traditional Japanese seasoning made from rice koji, salt, and water. Rice koji (麹) is rice that has been inoculated with the mold Aspergillus oryzae, which ferments the rice and breaks down its starches into sugars. When combined with salt and water, this mixture ferments further to create a flavorful paste or liquid that is rich in enzymes and umami.

Salted Koji is a versatile seasoning and tenderizer used in various ways.  It is used as marinade for meat, fish, and vegetables which tenderizes and enhances their flavor with subtle sweetness and umami. It is also used as a seasoning or as an alternative to salt for soups, stews, and sauces to deepen the flavor. It can also be used as a salad dressing and dip and can be added to rice or in onigiri.

Enjoy these flavorful chicken wings marinated in salted koji, garlic, sesame oil, and black pepper. The salted koji tenderizes the meat while infusing it with a savory depth, creating a deliciously unique taste.

Ingredients:

  • 12 pcs chicken wings
  • 2 tbsp salted koji
  • 2 tsp grated garlic
  • 4 tsp sesame oil
  • coarsely ground black pepper (to taste)

Instructions:

  1. Marinate the Chicken Wings:

    • In a large plastic bag, combine the chicken wings, salted koji, grated garlic, sesame oil, and a generous amount of coarsely ground black pepper.
    • Knead the bag thoroughly to ensure the chicken wings are evenly coated with the marinade.
    • Seal the bag and refrigerate for at least 30 minutes, allowing the flavors to meld and the koji to tenderize the meat.

  2. Prepare for Cooking:

    • Line the toaster oven tray with aluminum foil for easy cleanup.
  3. Cook the Chicken Wings:

    • Arrange the marinated chicken wings on the tray with the skin side down.
    • Bake in the toaster oven for 7 minutes.
    • Flip the chicken wings so the skin side is up and bake for another 15 minutes, or until the wings are golden brown and crispy.

  4. Serve:

    • Remove the wings from the toaster oven and let them cool slightly.
    • Arrange on a serving platter and enjoy!

Notes:

  • Salted Koji: Salted koji can be homemade and you can also find it in Asian grocery stores or online.
  • Marinating Time: For deeper flavor, you can marinate the chicken wings for up to 24 hours.
  • Cooking Method: If you don't have a toaster oven, you can use a regular oven set to 400°F (200°C). Bake the wings on a lined baking sheet, adjusting the cooking time as needed.
  • Serving Suggestions: These wings pair well with a side of steamed rice, a light salad, or some pickled vegetables to balance the rich flavors.
